For a long time, lunch was my forgotten meal. I would start the day with a good breakfast and finish with a great dinner, but for lunch I would just grab whatever was available.

What I really needed was a few tasty and nutritious options up my sleeve. Lunch recipes I could prepare in advance or when I’m in a hurry.

Here is when this fabulous Peri Peri Rice and Chicken Wrap makes an entrance and a pretty spectacular one at that!

The savoury flavours of chicken mash perfectly with acidic and spicy piri piri. When wrapped up with fresh vegetables and tasty yoghurt sauce, you have lunch sorted!

It’s good stuff and the Peri Peri rice and chicken wrap I’m sharing today is better than good. It’s fantastic! And other than the simple flavoured rice, there is no cooking involved, just assembling.

What you need for this delicious wrap are the things you probably already have on hand. Peri peri rice, roast chicken, store-bought or your own, cherry tomatoes, avocado, feta cheese, parsley.

And the best thing is spicy and garlicky yogurt sauce, that brings everything together in a tortilla wrap. I can’t get enough!

Peri Peri Rice

This is an affiliate link.Peri peri sauce and flavours are a staple here in the UK thanks to the success of a restaurant chain called Nando’s. But the flavour actually comes from the Portuguese, using peppers they found in Africa.

Peri-peri chili peppers are the key, along with garlic. But after this there is a lot of variation in how the peri peri sauce can be made. Each family recipe has their own twist. 

Peri-peri peppers are likely going to be hard to find outside of a few specific areas. Fortunately you can use several other peppers as substitutes, including jalapeño, cayenne or habanero peppers.

Recipe Tips and Notes

  • The vegetable toppings used in this wrap were based on my preference and what was available. The flavours in the wrap will combine with many other vegetables, so it is worth experimenting. Lettuce, red pepper and thinly sliced red onion will also go well.
  • Feta can be replaced with fresh mozzarella or shredded cheddar cheese.
  • You can use pre-made Peri Peri rice or cook your own, which is very quick and more delicious. Here is my Peri Peri rice recipe

Peri Peri Rice and Chicken Wrap

Ingredients 

  • 300g / 1½ cups homemade Peri Peri rice, or Veetee Peri Peri rice
  • 150g / 1 cup cooked chicken
  • 1 avocado
  • 6-8 cherry tomatoes
  • 2-3 parsley sprigs
  • 50g / 4 tbsp feta cheese, crumbled or any other cheese
  • 4 wraps, large

For the spicy yogurt sauce

  • 250ml / 1 cups plain yogurt
  • 1 garlic clove, minced
  • 1 tsp hot paprika
  • 1/2 tsp cayenne pepper
  • 1/4 tsp chilli flakes
  • 3 tbsp parsley, chopped
  • 1 tsp fresh lemon juice

Instructions 

  • To the plain yogurt add minced garlic, hot paprika, cayenne pepper, chilli flakes and chopped parsley and mix with a fork.
  • Lay out the wraps on a work surface and top them with the rice, chicken, tomatoes, avocado, parsley and feta equally divided among 4 wraps.
  • Roll them up tightly like an envelope.
