Delicious Peri Peri Rice and Chicken Wrap with things you probably already have on hand.
My alarm went off at 6 am this morning and by 7:23 I was on the train on my way to work. Do you wake up this early and is it still dark outside at that ungodly hour where you live?
If you answered yes and yes read on because there is still hope albeit little and food related but hope nonetheless. I started at my new job today, which was exciting for so many reasons…mainly I love teaching, also I work in the coolest area of London and finally, who doesn’t love a steady pay cheque!
Let’s go back to working in a cool area…it’s all good and fun but having so many lunch options are going to be perilous for my waistline AND will do damage to that aforementioned steady pay cheque. Here is when this fabulous Peri Peri Rice and Chicken Wrap makes an entrance and a pretty spectacular one at that!
With me accepting a new teaching positing life just got super busy again. I am not going to delve into details but to make a long story short here is the gist-I don’t really stop working until it’s time to go to bed.
I am either teaching, lesson planning or recipe developing, writing or photographing it, it’s ON all the time, so you won’t be too surprised to know that sometimes shortcuts in the kitchen is my favourite thing in the world, like this microwaveable rice from Veetee.
Tons of different flavours present loads of options for lunch or dinner and it doesn’t hurt that it tastes great. You know I won’t lie to you when it comes to food.
The best news though-no artificial colours, flavours or preservatives, which really helps not to be overcome with that mummy guilt.
It’s good stuff and the Peri Peri Rice and chicken Wrap I’m sharing today is better than good. It’s fantastic! Also no cooking involved, just assembling. 🙂
What you need for this delicious Peri Peri Rice and Chicken Wrap are the things you probably already have on hand . Veettee Peri Peri rice, roast chicken, which I bought cooked, cherry tomatoes, avocado, feta cheese, parsley.
And the best thing is spicy and garlicky yogurt sauce,that brings everything together in a tortilla wrap. Brad and I had these wrap for lunch for two days in a row. I can’t get enough!
- 1 packet/ 300 g Veetee Peri Peri rice
- 1/2 cooked chicken
- 1 avocado
- 6-8 cherry tomatoes
- 2-3 parsley sprigs
- 4 tbsp/ 50 g feta cheese crumbled or any other cheese
- 4 wraps
For the spicy yogurt sauce
- 250 ml/ 1 cup plain yogurt
- 1 garlic clove minced
- 1 tsp hot paprika
- 1/2 tsp cayenne pepper
- 1/4 tsp chilli flakes
- 3 tsbp parsley chopped
- 1 tsp fresh lemon juice
- To the yogurt add minced garlic, hot paprika, cayenne pepper, chilli flakes and chopped parsley and mix with a fork.
- Lay out the wraps on your work surface and top them with the rice, chicken, tomatoes, avocado, parsley and feta equally divided among 4 wraps.
- Roll them up tightly like an envelope.
