You’ve may have landed on spaghetti carbonara because weeknight dinners are a mad scramble to get on the table and you need something quick and easy, stat!

This is one of the recipes I keep at my fingertips for when I’m in that situation. It’s super speedy. And the ingredients are all ones I usually have available.

I know that many people get a bit nervous with this pasta dish, fearful that the sauce si going to split. But I’ve figured out how to make it so that you get smooth, luxurious sauce every time. Sounds good, right?

Authentic no-cream carbonara sauce recipe

Iconic Italian spaghetti carbonara has a legion of iterations. And you’ve probably tried a few: with ham and mushrooms, with sun dried tomato, with/ without garlic, with salmon or seafood, with lashings of cream. I won’t tell you any of these are wrong- you do you! But they are not the pared back, traditional recipe.

The classic ingredients for the just-like-mama-used-to-make experience are:

  • Guanciale – a cured meat taken from the jowl of a pig. Hmmm? Tasty, but not easy to come by outside Italy! Accessible swaps are pancetta or thick cut smoked bacon.
  • Pecorino – a hard, salty sheep’s milk cheese, stocked by large supermarkets. But substitute guilt-free for Parmesan if you already have a block.
  • Eggs – using the yolks only makes the sauce extra glossy. My trick is to use one whole egg and the rest is egg yolks. It’s bonus protein! If it’s your first time, I recommend using egg yolks only. This way, the method is foolproof since it’s the egg whites that can split the sauce.
  • Black pepper – for a punch of flavour and possibly how the dish got its name (carbonara meaning charcoal burner- you need to use your imagination!).

See? No cream in an authentic carbonara recipe.

I have to admit though, that this mama pan fries a clove of garlic in a tablespoon of butter and the pork fat to build more of a flavour foundation. But I do remove the crushed clove before adding the pasta, so all that’s left is a subtle garlic ghost.

How is no-cream carbonara sauce so creamy?

The pasta water is your secret weapon. It will have absorbed some of the starch from the pasta while cooking, so it adds texture and flavour, and provides some extra liquid for the sauce. Don’t drain it down the sink!

So, what I’m saying is the unctuous nature of no-cream carbonara sauce is all down to egg, cheese and pasta water alchemy. Not cream.

Isn’t that great news? Lower in calories, lighter on the digestion and just as delicious.

Things to remember

  • Take the pan off the heat before adding the egg and cheese mixture to avoid scrambling!
  • Use the yolks only for a sensationally slippery sauce.
  • Dial back the cheese (especially if using Pecorino) to avoid the dish being too salty.
  • Use freshly grated cheese off the Parmesan block so it emulsifies seamlessly to avoid a clumpy sauce! See homemade alfredo sauce for a rant on pre-grated hard cheese.
  • Keep back a cup of pasta water. You’ll need to make the sauce saucey.
  • Add the pasta water a bit at a time to avoid it being too watery. Conversely, you can add more if it looks too thick.

Recipe Tips and Notes

  • Pancetta, guanciale or thick cut bacon will all work. I used easy-to-come by pancetta.
  • Pecorino or Parmesan are interchangeable in this recipe. I used Parmesan as that’s what I had to hand.
  • Garlic is not strictly a traditional ingredient, but I love it. Feel free to leave it out.
  • Spaghetti is the go-to for a carbonara sauce, but any long pasta you have in the pantry will work. Or, if you have time, make your own.

Serving suggestions

You’ve picked out a quick and easy spaghetti carbonara recipe because you’re short on time. There’s no need to over complicate things with fussy sides.

Choose a simple salad; caprese salad or a garden salad, or a low-prep vegetable like lemon butter broccoli. And a cheesy, air-fryer garlic bread, of course!

It’s worth noting that it’s difficult to combine the egg and cheese mixture into the pasta if making large quantities of carbonara. Although this might seem to be a tempting recipe to make for guests, I find it challenging to make for more than four people.

Storage and leftovers

Spaghetti carbonara is at its chef’s-kiss-best straight off the stove top. I make what I need so there are no leftovers. Storing leftover pasta dishes in the fridge makes for a flabby pasta and a sticky sauce.

But if you must, you must! It will keep for 2-3 days in an This is an affiliate link.airtight container in the fridge. You can reheat leftover carbonara in the microwave.

This is the easiest, delicious pasta recipe I’ve tried. I’m not a pasta fan, but because my son loves Spaggetti with Carbonara sauce, I googled for a simple recipe. Whoala…. he loves it. I subatituted the pancetta / bacon with a pan-fried chicken chop. Delicious. Thank you. From Malaysia. ❤

My husband and I really enjoyed this meal… And he’s not usually a big fan of pasta. I used back bacon and that seemed to work well as a substitute for pancetta. I was nervous about adding the egg/cheese mix, but following the instructions, I had no problem. Thank you for sharing this recipe, I look forward to using it more!

    1. vikalinka says:

That is such good news, Jessica. I used to feel the same about the raw egg mixture. I thought it would curdle but if done properly, it turns into a delicious sauce!

I want to make CARBONARA SAUCE WITH BACON BITS BUT NO PASTA do you prepare it the same way without the pasta I`d like to jar it
    Thanks Mick

    1. vikalinka says:

Hi Mick, this type of sauce is impossible to jar as it’s made with raw egg and needs to be cooked by the heat of pasta, so it can’t be made ahead. This sauce recipe takes as long as boiling pasta, so no need to make it ahead. However this creamy pasta sauce can be.

I made this but used the last bit of salami I had, it turned out wonderful and it’s the first time I’ve ever had it. Thank you for your step by step, I was pretty intimidated about the egg possibly curdling, but it stayed silky and beautiful. Thank you! I will have to check out your other recipes.
