Thanksgiving and Christmas are just around Winter’s corner and I’m promising to make use of the seasonal vegetables available and to cook more consciously this year; field-to-fork and nose-to-tail. How about you?
So, with that in mind, I’m revisiting some tried and true recipes that spin yesterday’s leftovers, especially turkey, into magical meals tomorrow.
Here are 10 of my faithful winter recipes that help ensure a frugal, food-efficient and flavourful cold season.
Leftover Turkey Soup

Simple, delicious and thrifty. I’ve added giant couscous to this cozy soup for more fibre and heft. Serve with buttery sourdough toast for ultra comfort.
Thick and hearty, this comforting curry is protein-packed with red lentils and leftover turkey. It combines tomato and creamy coconut for a best-of-both sauce. Serve with coconut rice and soft homemade naan.
Chunky cut potatoes, leeks and carrots simmer together in this satisfying turkey and thyme-infused stew. Make it luxurious by adding cream or keep it light and brothy with simple stock. For more weight, make your own doughy dumplings.
Homemade stock doesn’t have to take all day. This comparatively quick recipe takes half the time of others and produces the silkiest, golden liquid. Use in chicken soup, Italian chicken stew, or even pasta dishes.
This turkey recipe will reinvent your holiday roast. Turkey, bell peppers, mushrooms and garlic come together in a dreamy, creamy, boozy sauce. Serve it over rice or pasta for a break from potato leftovers.
Laced with marsala wine and heavy cream, it’s pure luxury under a puff pastry lid. And at 10 minutes prep time and 1 hour in the oven, it’s just what you need if you’ve been spending too much time in the kitchen.
Indian curry spices, rice and lentils heavily disguise the leftover turkey in this fragrant, winter soup. Ready in just 30 minutes, it’s the quickest way to get rid of yesterday’s roast. Easily swap out the turkey for chicken if that’s what you have.
Is it a stew? Is it a soup? This chunky, creamy and comforting meal is a midwinter wonder. Serve with oozy and decadent baked camembert in a bread bowl.
The nostalgic soup of my childhood. Delicately flavoured broth, thick cut potatoes and carrots, shredded chicken (or turkey, ofc!), piles of fresh herbs and handmade traditional doughy dumplings. Just like my grandma made.
Sage Chicken Pot Pie with Roasted Harvest Vegetables

All the winter veg are hiding in this one: pumpkin, cauliflower and carrots, along with your leftover turkey (or roast chicken) and blanketed in a snug, and convenient, store-bought pastry pie crust. Serve with creamy celeriac and brown butter potato mash.
