Baked pastas are the heroes I turn to when life is a bit crazy but I still need to get a proper cosy dinner on the table. With the right protein, a few cupboard staples, and plenty of melty cheese mean I can get something gorgeous in the oven without losing my mind.

Sausage Pasta Bake

When I'm really craving a lasagna but just don't want to put in the effort, this is the first dish I turn to. It packs in loads of flavour with very little effort, and goes from stove to table in under an hour. It's a true midweek staple in my house.
A trattoria classic, this is a stunning pasta bake for chilly evenings, especially when we are all eating at different times and need dinner to stay hot. It can be assembled ahead and thrown in the oven when needed. Leftovers also reheat beautifully!
Stuffed Pasta Shells with Tomato and Pesto Meat Sauce

An impressive dish that takes very little hands-on time, with the pasta shells as the secret weapon. Stir basil pesto into the simple tomato beef sauce, and then spoon it all into the giant pasta shells. Finish it off with mozzarella for an irresistible bake. It can be assembled in the morning and baked for dinner.
This is a simplified version of the baked ziti I loved when I was younger, and perfect for a weekend meal. The pasta is drenched in garlicky beef and tomato sauce, then topped with mozzarella and baked till bubbling. I finish with some fresh tomato and basil salsa for a little lift.

I love gnocchi alla Sorrentina but don't always have the time, which is when this pasta bake is so perfect. I toss store-bought gnocchi in a meaty tomato and basil sauce, and bake it smothered with mozzarella and Parmesan. It cooks in a flash, but still feels indulgent.
One-pan baked orzo with juicy meatballs, designed to give you a little taste of Greece whenever you are in the mood. Finished off with salty crumbles of feta, it all gets cooked in one casserole dish, which means less washing up and more time relaxing. The sort of pasta bake that brightens a long week.
There are some evenings when only mac and cheese will do, and this brie version is my way of elevating the experience. Rather than fussing with traditional cheese sauce, I melt the brie with garlic and rosemary in the oven, them pour it right over the pasta and spinach. Finish with a quick bake for a gooey, fragrant and luxurious dish.
Another mac and cheese, this time mixing it with a speedy bolognese. It tastes like the creamiest lasagna you have ever had, but with half the work and no fiddly layers to line up. The best part may be the crunchy top!
