Overnight dinner rolls with Everything Bagel seasoning are fluffy-centred, gold-brushed, enriched buns. The sprinkling of seasoning; poppy, black and white sesame seeds, garlic and onion granule, and salt, make them a super savoury go-with-anything side. 

Sweet-toothers, this one’s for you: maple butter corn muffins. Slightly cakey, definitely syrupy, surprisingly satisfying with a savoury dish. Or just eat them on their own!

Do you serve dinner rolls? In the UK, based on my investigative research of asking friends, I would say most people think of them as the fare of stuffy, white-linen restaurants. Or that rolls are strictly for sandwiches on-the-go, commonly known as ‘baps’.

Whereas, in North America, dinner rolls are a common accompaniment to a homemade meal. I can’t say that most Americans and Canadians bake them from scratch- those ready-made Parker House rolls from a grocery store are pretty convenient!  

But when you see how easy dinner rolls are to bake yourself, and more economical, you’ll be rolling your sleeves up and getting your hands doughy.

Homemade dinner rolls

You might not be whipping up a batch of these easy dinner rolls every night, but their association with elegance means they deserve a place at a special occasion. And the biggest occasion there is is right around the corner…Christmas! 

Dinner rolls are a perfect Christmas side dish, thanks to their sauce-soaking properties, but does anyone really want to add to the Christmas Day Cooking to-do list? Well, you don’t have to! This overnight dinner roll recipe also means you can get ahead of the festive game by making the dough and proofing a day before and refrigerating overnight.

Not only is this a convenient kitchen hack, but the cold of the fridge will slow down the fermentation process to allow the flavours enriching the dough to develop to sweet aromatic heights.

For the richest, most risen and mallow-soft rolls, follow my lead and use milk and egg to enrich the dough for a more tender crumb (that means extra fluffiness). 

Finally, I’ve sprinkled on some Everything Bagel seasoning. This confetti-blessing brings some texture, nuttiness, and seed power.

Recipe tips and notes

  • Follow the recipe and measure the ingredients accurately. It’s a science!
  • I use a This is an affiliate link.stand mixer with a dough hook. But you can easily mix the soft dough by hand.
  • At the end of kneading, the dough should be baby-cheek soft, not sticky. 
  • It can take between an hour and 1.5 hours for the dough to proof. 
  • However, this can differ from home to home and season to season- it’s temperature dependent. 
  • Use your eyes and own judgement. When the dough has tripled in size, it’s proofed. 
  • Giving your homemade dinner rolls a night in the fridge before baking will improve flavour and crust.

Serving suggestions

I’m all about festive food right now and these easy dinner rolls are always a family favourite Christmas side dish. 

Our main event this year will be a herbed butter turkey crown. But dinner rolls would make the cut whether it was beef prime rib, duck or a side of baked salmon. As long as you have lashings of gravy, juicy stuffing and an array of sauces; cranberry sauce, bread sauce, chestnut sauce, etc., you’ll want a pillowy homemade dinner roll to hand.

Storage and leftovers

Sixteen homemade dinner rolls might sound excessive if you’re a small household, like mine. But the great news is, they are fabulous freezers; the surplus will keep in an airtight container for 2-3 months.

Or save the spares, storing in a cool, dry place and use them to make the most tempting turkey sandwiches (using holiday leftovers, of course). If I’ve persuaded you towards a Boxing Day glazed ham, fill the leftover rolls with fat slices of cold cuts and plenty of pickles.

Ingredients 

  • 230ml / 1 cup warm milk, whole or skimmed
  • 1 1/2 tsp sugar
  • 7g / 1 tbsp This is an affiliate link.active dry yeast
  • 3 tbsp vegetable oil
  • 1 egg, large
  • 1 tsp salt
  • 500g / 3 cups bread flour, or all purpose flour
  • 1 egg, for brushing
  • 1 tbsp everything bagel seasoning, (optional)

Instructions 

  • In a small bowl combine the warm milk, yeast and sugar and let it stand for 5 minutes until you see the yeast bloom. Then add the oil, salt and 1 egg. Mix with a fork.
  • Add the liquid to the flour, mix until rough dough forms, then take it out of the bowl onto a floured surface and start kneading until smooth and elastic dough is formed for approximately 8-10 minutes. If using a stand mixer, knead using a dough hook attachment for 1 minute on low speed, then switch to medium and kneed for 4 minutes longer.
  • Take the dough out of the bowl and rub the bowl with vegetable oil, then return the dough to the bowl, cover with plastic wrap and a towel and let it rise for 1 hour to 1.5 hours in a warm place until it triples in volume.
  • Take the dough out of the bowl onto a floured surface and divide into 15- 16 equal parts. (You might want to weigh them to ensure they are all the same but eyeballing is also fine.) Roll into balls and place into a well-buttered 9×13 inch baking pan 1 inch apart from each other. Cover with cling wrap and refrigerate overnight.
  • Alternatively, you can bake the rolls the same day if you wish. For this you will need to allow the shaped dough to rise for the second time in a warm place, which usually takes about 30 minutes ( watch your dough if after 30 minutes it hasn’t risen much, it needs longer before you move onto baking) then follow the baking instructions below.
  • The following day, take the dough out of the fridge 1 hour before you plan to bake them. Preheat the oven to 180C/350F. You will see the dough balls will have risen after spending the night in the fridge. Bring them to room temperature, then brush with a beaten egg and sprinkle with everything bagel seasoning. Then bake in the preheated oven for 20-25 minutes or until golden.
