Don’t you feel like winter months seems to drag on and on… and on? There is so much anticipation as we all look towards Christmas but as soon as December is over all we want is for the summer to return.

So I decided to bring the summer back by enjoying the tropical flavours of Pina Colada. Clever? I like to think so. 

To be honest with you I am not a fan of sugary sweets or drinks but Pina Colada is different. I love it and I think it’s all due to coconut.  Because as the story goes when you take a lime and a coconut,  magic happens or so I am told.

I hope I won’t scare you away by admitting that I replaced lime with blood orange, mostly because I can’t resist their beauty and irresistible flavour!

How to make frozen pina colada

Those frozen drinks we associate with holidays and resorts are so delicious and refreshing. Thankfully they are so easy to make at home. 

All you need is a reliable blender or a food processor, a bag of ice and a few helpful tips. 

  • Use freshly squeezed orange juice instead of the store bought. More flavour, less sugar. 
  • Turn the orange juice into ice cubes to avoid watering down your drink. 
  • Blend a real pineapple into your frozen pina colada to add more “body” and vitamins. 
  • Always garnish your pretty drinks for that holiday feel! Coconut flakes and pineapples slices are my favourite. Throw in a festive drink umbrella if you’ve got one!

I expected my Frozen Pina Colada to turn bright red. Instead blood oranges gave it a soft pastel pink hue, which made me fall in love with them even more.

The problem with recreating a luscious tropical drink in the winter months is that fruit is not always at their sweetest. That was the case with my pineapple, so I added a few tablespoons of sugar to my drink. Use my measurements as a guide but adjust to your own taste. 

The test run was a huge success with everyone but especially with the little ones, so I am expecting you will absolutely love this light and refreshing Frozen Pina Colada Recipe.

Equipment

Ingredients 

  • 250ml/1 cup freshly squeezed blood orange juice, approx. 4 medium oranges
  • 1 cup pineapple, diced, approx. 1/2 of medium pineapple
  • 400ml/1 1/2 cup This is an affiliate link.coconut milk, creamy part only
  • 4 tbsp granulated sugar
  • 1 cup ice

Instructions 

  • The night before juice blood oranges and freeze the juice in ice cube trays until solid.
  • Peel and core a pineapple, dice a half of it and process in a food processor.
  • Add the sugar, the creamy part of the coconut milk (discard the water), frozen in ice cubes blood orange juice and ice. Blend until you have a slushy.
  • Serve garnished with pineapple slices and shredded or shaved coconut.

Add some white rum if desired
