This spinach pesto is made with fresh spinach, cilantro, parsley, garlic and walnuts, it's not basil pesto's pale cousin but a dangerous rival!

200g / 6½ cups
fresh spinach
90g / 3/4 cup
walnuts

clove
garlic

tbsp
red wine vinegar
10g / 1/2 cup
flat leaf parsley with stems
10g / 1/2 cup
cilantro with stems

lemon
juice only
75ml / 1/3 cup

salt to taste
Instructions
Add all ingredients to a blender or a food processor and blend until smooth.
Add salt to taste. If using a blender, it helps to use a tamper to process a large amount of spinach.
Notes
The recipe makes 1.5 cups/375ml of spinach pesto.
