Spinach Pesto Recipe

This spinach pesto is made with fresh spinach, cilantro, parsley, garlic and walnuts, it's not basil pesto's pale cousin but a dangerous rival!

Equipment

Ingredients

  • 200g / 6½ cups fresh spinach
  • 90g / 3/4 cup walnuts
  • 1 clove garlic
  • 3 tbsp red wine vinegar
  • 10g / 1/2 cup flat leaf parsley with stems
  • 10g / 1/2 cup cilantro with stems
  • 1/2 lemon juice only
  • 75ml / 1/3 cup This is an affiliate link.olive oil
  • 1/4-1/2 tsp red chilli flakes
  • salt to taste

Instructions

  • Add all ingredients to a blender or a food processor and blend until smooth.
  • Add salt to taste. If using a blender, it helps to use a tamper to process a large amount of spinach.

Notes

The recipe makes 1.5 cups/375ml of spinach pesto.
