Middle-Eastern Fattoush Salad

- 1 Stale Naan or Turkish flatbread grilled, large
- 3 Ripe Tomatoes large, diced into 1/4 inch
- 1 Thin English Cucumber or mini cucumbers 1 large or 3 mini, diced into 1/4 inch,
- 2-3 green onions thinly sliced
- 25g / 1/4 cup flat leaf parsley chopped
- 250ml / 1 cup buttermilk or plain yogurt
- 1 tbsp dried mint
- 2 cloves garlic crushed
- 3 tbsp lemon juice
- 2 tbsp white wine vinegar or cider vinegar

- 3/4 tsp black pepper
- 1½ tsp salt
- 1 tsp sumac orange Middle Eastern spice (lemon flavour)
Grill or toast your naan or flatbread.
In a large bowl combine diced cucumbers, tomatoes, sliced onions, crushed garlic and chopped parsley.
In a small bowl combine buttermilk, lemon juice, white wine vinegar, olive oil, dried mint. Pour the dressing over your vegetables, stir to combine and season with salt and pepper.
Sprinkle with sumac and let it sit for 10 minutes for the flavours to blend. Tear the bread into small pieces and mix in the salad.
