Hot Cheesy Salmon Sandwich

Hot salmon sandwich with oozing cheese on delicious crusty bread.

Ingredients

  • 212g / 7½ oz canned salmon drained, discard skin and bones
  • 100g / 3½ oz hot smoked salmon flaked
  • 2 green onions sliced
  • 1 small pickle (gherkin) or 1 tsp capers
  • 25g / 1/4 cup celery (1 small rib) diced
  • 1 tsp fresh dill
  • 110g / 1/2 cup mayonnaise I used low fat
  • 1/2 tsp mustard
  • 1 tbsp lemon juice
  • 50g / 1/2 cup grated sharp cheddar such as aged cheddar
  • 4 slices good quality bread

Instructions

  • Combine all ingredients other than cheese and bread in a bowl and mix, flaking the pieces of salmon so they are even sized.
  • Add the salmon mixture to slices of bread and cover with shredded cheese. Cook in a preheated oven with the broiler on for three minutes.

Notes

This salmon sandwich can also be cooked in an air fryer for 3 minutes.
