- 1kg / 2 lbs skinless boneless chicken breasts cut into cubes
For the marinade
- 2 tsp ground coriander
- 2 tsp ground cumin

- 1 tsp thyme
- 1 tsp oregano
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1 tsp salt
- 1 tbsp garlic powder or 6 minced garlic cloves
- 2 lemons juice only

Mix all the ingredients for the marinade and pour over chicken breasts, cut into cubes. Marinate for 2-3 hours in the refrigerator.
Thread the marinated chicken onto wooden or metal skewers. If you are using the wooden skewers, soak them in water for at least 30 minutes, so they wouldn’t catch fire.
Grill for 5-7 minutes on each side depending on the size of the chicken pieces. See the body of the post for serving suggestions.
- This recipe will make 6 large skewers.
- Either boneless skinless chicken breasts or thighs can be used. However, thighs will result in juicier and more flavour meat.
- Be careful not to cut the chicken into pieces that are too small. Smaller pieces are more likely to dry out on the grill, and can be harder to keep on a skewer.
