Equipment

Ingredients

  • 4 tbsp mango purée I used ready sweetened puree from a jar but you can make your own in a blender
  • 1 lime juice of
  • 10-12 fresh mint leaves
  • 4oz / 120ml This is an affiliate link.light rum
  • 2/3oz / 20ml simple syrup
  • soda water
  • ice cubes

Instructions

  • For the mango purée: add the mango chunks of 1 mango in a blender and purée or use pre-made mango purée.

Traditional method

  • Split the mint, rum, lime juice, mango purée and simple syrup between two tall glasses and muddle carefully to release the flavours but not so much that the mint disintegrates. Add plenty of ice and top with soda water.

Shaker method

  • In a shaker, combine lime juice, sugar and mint and muddle the mint until it tears and releases the scent. (Sugar helps that process.)
  • Strain mango puree into the shaker. Add ice and rum. Cover and shake vigorously. Strain into a chilled glass and top with soda water.
  • Garnish with lime slices and mint.

Notes

  • If you prefer an alcohol-free version, simply skip the rum for a refreshing sparkling mango drink.
  • Like almost every cocktail, this one needs to be cold to be at its best. Use lots of ice!
  • There is no point using expensive rum because of the other flavours in the drink. For a more traditional taste, use white or light rum (the clear variety).
  • But for a deeper flavour, you can try using dark rum. Just avoid spiced!
  • It's important to use fresh lime juice instead of bottled. A This is an affiliate link.citrus squeezer is the easiest way to get juice from the limes.
  • Club soda is normally used in mojitos, but they can also be made with tonic water. I find that tonic water masks the taste of the other ingredients. Tonic water has sweetness in it, so if you do use it, leave simple syrup out.
  • Lime wedges are a great garnish for this cocktail.
