Chicken Caesar Crostini

These appetizers are tiny towers of chicken Caesar, bacon bits, and crisp lettuce balanced on crostini platforms.

Equipment

Ingredients

  • 2 medium chicken breasts cooked (I poached mine)
  • 4 bacon strips
  • 115g / 1/2 cup mayonnaise best quality
  • 1/2 small clove garlic finely minced
  • 2 tbsp lemon juice fresh

  • 25g / 1/4 cup Parmesan grated
  • Salt
  • Pepper
  • 150g / 5 oz store bought crostini or bruschetta
  • 3-4 gem lettuce leaves (baby romain lettuce) torn into small pieces
  • 1 tbsp chives chopped

Instructions

  • Cook the bacon till crispy, cool and chop into bits. Set aside. Mince the cooked chicken breasts and set aside till needed.
  • Make the Caesar dressing by mixing together the mayonnaise, finely minced garlic, lemon juice, Dijon mustard and Worcestershire sauce in a medium bowl. Stir in grated Parmesan cheese, add salt and pepper to taste.
  • Add the minced chicken to the dressing and mix to combine. Taste and adjust the salt and pepper if needed.
  • Top each crostini with a small amount of the chicken mix, then place a small piece of lettuce on top, add more chicken and sprinkle with bacon bits and chopped chives for colour.
