Chocolate Pear Bites with Rolo Centers

Ingredients
  

  • Flour- 1 ¾ cups
  • Sugar- 1 ½ cups
  • Cocoa- ¾ cup
  • Baking powder- 1 ½ tsp.
  • Baking soda- 1 ½ tsp.
  • Salt- 1 tsp.
  • Eggs- 2 large
  • Milk- 1 cup
  • Oil- ½ cup
  • Vanilla- 2 tsp.
  • Pears peeled and diced- 4 small
  • Rolo- 24

Instructions
 

  • Preheat your oven to 350F/180C. Line your muffin pan with paper liners.
  • Peel and dice the pears
  • In a large bowl mix flour, sugar, cocoa, baking powder, baking soda and salt.
  • Add eggs, milk, oil and vanilla and beat with an electric mixer on medium speed for 2 minutes.
  • Stir in pears by hand.
  • Pour in ¼ c. of batter per muffin cup and insert one rolo in the center of each cupcake.
  • Bake at 350F/180C for 17 minutes.
