Peri Peri Rice and Chicken Wrap

Peri peri chicken, rice, tomatoes and avocado wrapped in a flour tortilla.

- 300g/1 ½ cups homemade Peri Peri rice or Veetee Peri Peri rice
- 150g/1 cup cooked chicken
- 1 avocado
- 6-8 cherry tomatoes
- 2-3 parsley sprigs
- 50g/4 tbsp feta cheese crumbled or any other cheese
- 4 wraps large
For the spicy yogurt sauce
- 250ml/1 cups plain yogurt
- 1 garlic clove minced
- 1 tsp hot paprika
- ½ tsp cayenne pepper
- ¼ tsp chilli flakes
- 3 tbsp parsley chopped
- 1 tsp fresh lemon juice
To the plain yogurt add minced garlic, hot paprika, cayenne pepper, chilli flakes and chopped parsley and mix with a fork.
Lay out the wraps on a work surface and top them with the rice, chicken, tomatoes, avocado, parsley and feta equally divided among 4 wraps.
Roll them up tightly like an envelope.
