Frozen Blood Orange Pina Colada (Virgin)

Ingredients
  

  • 250ml/1 cup freshly squeezed blood orange juice approx. 4 medium oranges
  • 1 cup pineapple diced, approx. ½ of medium pineapple
  • 400ml/1 ½ cup coconut milk creamy part only
  • 4 tbsp granulated sugar
  • 1 cup ice

Instructions
 

  • The night before juice blood oranges and freeze the juice in ice cube trays until solid.
  • Peel and core a pineapple, dice a half of it and process in a food processor.
  • Add the sugar, the creamy part of the coconut milk ( discard the water), frozen in ice cubes blood orange juice and ice. Blend until you have a slushy.
  • Serve garnished with pineapple slices and shredded or shaved coconut.

Notes

Add some white rum if desired
