250ml/1 cupfreshly squeezed blood orange juiceapprox. 4 medium oranges
1cuppineapplediced, approx. ½ of medium pineapple
400ml/1 ½ cupcoconut milkcreamy part only
4tbspgranulated sugar
1cupice
Instructions
The night before juice blood oranges and freeze the juice in ice cube trays until solid.
Peel and core a pineapple, dice a half of it and process in a food processor.
Add the sugar, the creamy part of the coconut milk ( discard the water), frozen in ice cubes blood orange juice and ice. Blend until you have a slushy.
Serve garnished with pineapple slices and shredded or shaved coconut.
