Tomato Salad with Herb Vinaigrette and Feta

This delicious tomato salad made with capers and feta, then dressed with a fresh herb lemon vinaigrette is bursting with flavour!

Ingredients
  

  • 1 lemon zest and juice only
  • 1 shallot
  • ½ clove garlic
  • 1 tbsp fresh oregano chopped
  • 20g/1/2 cup fresh parsley
  • 60ml/1/4 cup olive oil
  • salt to taste
  • 5 red and yellow tomatoes medium
  • 3-4 cherry tomatoes red and yellow
  • 3 tbsp capers
  • 75g/1/2 cup feta cheese

Instructions
 

  • In a large bowl combine the zest and juice of a lemon, finely chopped shallots and minced garlic, the chopped leaves of parsley and oregano with a pinch of salt.
  • Add the tomatoes cut into wedges and halved cherry tomatoes, capers and the feta cheese. Mix to combine. Season with salt to taste. Let the salad sit to infuse for 20 minutes before serving.
