All Natural Pumpkin Seed and Hazelnut Granola

Filled with all things delicious and nutritious like pumpkin seeds, hazelnuts, dried fruit and oats and sweetened with honey and maple syrup this granola recipe is for the keeps!

Ingredients
  

  • 2 tbsp coconut oil
  • 125ml/1/2 cup maple syrup I used real Canadian maple syrup
  • 2 tbsp honey
  • 300g/3 cups oats preferably organic
  • 30g/1/4 cup hazelnuts
  • 30g/1/4 cup pumpkin seeds
  • 50g/1/3 cup dried fruit apricots, cherries, raisins etc
  • 20g/1/4 cup large coconut flakes

Instructions
 

  • Preheat oven to 180C/350F
  • In a large bowl whisk together melted coconut oil, maple syrup and honey.
  • Add all the remaining ingredients except for dried fruit and coconut flakes, combine and press the mixture into a parchment lined baking sheet (this way no extra fat is needed for greasing).
  • Bake in the preheated oven for 15 minutes. Take it out, break into clusters and mix in dried fruit and coconut flakes, bake for additional 10 minutes. Let cool and store in an airtight container.
