Ingredients
  

  • 300g/1 ½ cups homemade Peri Peri rice or Veetee Peri Peri rice
  • 150g/1 cup cooked chicken
  • 1 avocado
  • 6-8 cherry tomatoes
  • 2-3 parsley sprigs
  • 50g/4 tbsp feta cheese crumbled or any other cheese
  • 4 wraps large

For the spicy yogurt sauce

  • 250ml/1 cups plain yogurt
  • 1 garlic clove minced
  • 1 tsp hot paprika
  • ½ tsp cayenne pepper
  • ¼ tsp chilli flakes
  • 3 tbsp parsley chopped
  • 1 tsp fresh lemon juice

Instructions
 

  • To the plain yogurt add minced garlic, hot paprika, cayenne pepper, chilli flakes and chopped parsley and mix with a fork.
  • Lay out the wraps on a work surface and top them with the rice, chicken, tomatoes, avocado, parsley and feta equally divided among 4 wraps.
  • Roll them up tightly like an envelope.
