No one likes being stuck in the kitchen while family and guests enjoy a relaxed Easter Sunday. That tells me to be prepared, planning and prepping ahead of time as much as I can manage, so when the day arrives I don’t have to get up at the crack of dawn and rush around all day to get everything ready.
Here is my 3 course Easter menu as recently featured on Daily Express. 3 out 4 items on this Easter dinner menu could be prepared the day before without sacrificing flavour and freshness, while the roast leg of lamb hardly takes any hands-on time and cooks within 1 hour and a half. That is a win-win situation for me.
Start with a lovely appetiser. These Feta and Zucchini Fritters with Garlic Yogurt Sauce are a picture of spring. Recipe.
Continue with this herb crusted Roast Leg of Lamb with Mint Sauce that takes only 1 hour and 30 minutes to prepare! The mint sauce compliments the meat and adds a much welcome springy fresh flavour to the lamb. Recipe.
